Made from the juice of organically grown, fully ripened Trebbiano grapes, cooked and simmered for hours to a reduction called 'mosto cotto', then cooled in barrels and aged - turning into vinegar.
A gorgeous dipping vinegar, perfect for marinades (we love using this to marinate sliced tofu), or for a real treat, sprinkle a few drops on your hot chips!
